Impossible Cheeseburger Pie

Did anyone grow up with this dinner? I know my mom made it a handful of times during my childhood (only I’m sure she used Bisquick!). I recently made this when it was recommended by a friend who was trying the Feingold diet. It was a winner, other than mild complaints about the zucchini from the kids. It’s pretty quick and easy to throw together, and you can add additional veggies to the meat mixture if desired (which I did). There is just something comforting about a good old-fashioned casserole! 

Ingredients

1 pound ground beef or turkey

1/2 cup chopped onion

1/2 teaspoon salt

1/4 teaspoon pepper

3/4 cup flour

2 teaspoons baking powder

1/4 cup oil

3 eggs

1-1/2 cups milk

1 zucchini, sliced (optional)

1 cup shredded cheese

Preparation

Preheat oven to 400 degrees.

Brown ground beef or turkey, onion, salt and pepper. Drain off any grease. Put in a greased 12 x 7 inch baking dish. In a bowl mix flour, baking powder, oil, eggs and milk for 1 minute. Pour over ground beef/turkey mixture. Arrange sliced zucchini over pie and sprinkle on cheese. Bake for 30-35 minutes.
