Here’s a “recipe” (if you can even call it that) from the Trader Joe's flyer discovered by one of our SLOCA parents that is SO easy, and SO good for you, that we just had to share it. All you need is 2 or 3 ingredients from the fresh deli section of Trader Joe’s (pictured above):
- 1 box of steamed lentils, ready to eat
- 1 container of bruschetta sauce
- 1 container of feta cheese (optional, add as much or as little as you like)
Literally, just dump all of these in a bowl and mix well (you may need to separate the lentils a bit). Serve with pita chips, crackers, sliced bread, or anything! This would also be great served over greens for a salad, or heated and served over pasta for a main dish (or cold for a pasta salad).
We love this dip not only because it’s so quick and simple to make, but it’s full of flavor and packed with protein, fiber, and iron. And reports around school confirm that kids of all ages love this! You can pack this in you child’s lunch, or keep the ingredients on hand for a nutritious home day snack/meal. And the next time you need to bring a dish to share and are short on time, stop by TJ’s for a few ingredients and assemble when you get there – it couldn’t be easier!
