Welcome to Down Home, San Luis Obispo Classical Academy’s blog! We are a classical school offering several options to make our education work for families with infants through high schoolers. Our signature hybrid program, which is part-time classroom and part-time home instruction, provides an engaging education for preschool through middle school (with full time options available). What’s for Dinner?

Dear Readers, after many weeks of takeout, tacos and random stir fry’s, I (Wei)  finally found myself searching for easy dinner ideas. Lo and behold I found that the Down Home archives also contain many recipes under its “What’s for Dinner?” section. Today I have a couple of favorite recipes that I have found useful this week, and beneath that is a popular post from last year –  Dinners with minimal ingredients!

  • Creamy Tortellini Soup: Sausages, tortellini and kale
  • Ramen Noodle Soup: ramen, pork bones, broth (disclaimer: I own the Slow Cooker recipe book, sub whatever meat I have in the fridge and also get fresh ramen from a local Asian market)
  • Teriyaki Salmon: salmon, homemade teriyaki sauce and garnishes (you didn’t hear it from me but Soy Vey also works really well as a marinade)

Today we have compiled for you a handful of recipes that only require a handful of ingredients. Many of these are even easy enough for our perpetually hungry kids to make. So put them to work! You’ll find the title of the recipe, a list of the ingredients required, and a link to the full recipe. Bon Appetit!
