Savory Parmesan Granola

Makes 2-1/4 cups

Welcome, Spring Break! In fact, the first day of spring is tomorrow. Springtime makes me think of yummy salads, which makes me think of this even more yummy savory granola which I’ve been making a lot lately and putting on salads! If you are a salad lover and like to add fun toppings, try this crunchy alternative to nuts or croutons. I’ll admit that I also love to eat this right out of the jar, when I want a little something salty to munch on.

Ingredients

2 cups Uncle Sam Original Cereal (use Erewhon Buckwheat & Hemp for a gluten-free version)

1/2 cup sunflower seeds

1/4 cup finely grated Parmesan cheese

1/2 teaspoon sea salt

1/2 teaspoon garlic powder

1 egg white, beaten

2 tablespoons olive oil or melted coconut oil

Instructions

Preheat your oven to 300º F. Line a baking sheet with parchment.

In a large bowl, mix together the cereal, sunflower seeds, Parmesan cheese, sea salt, and garlic powder. In a separate bowl, whisk together the egg white and oil. Pour the egg white mixture over the cereal and stir until incorporated.

Spread the cereal over the parchment paper into a thin layer. Bake for 20-25 minutes, stirring twice. Remove from the oven and allow to cool completely. Break into pieces and store in an airtight container until ready to use.

Sprinkle savory granola over salads or as garnish on soups or eat it plain as a salty snack.
