Off Your Plate: Meal Ideas

Happy LAST Friday of summer! Are you mourning the end of summer or eager for the fresh, new school year? Perhaps feeling a little overwhelmed with all that this back-to-school season brings? Today at Down Home we have some breakfast AND lunch ideas for you that will hopefully allow you to take one more thing “off your plate”.  


Breakfast:

As much as I (Sharon) would like dessert to be deemed “The Most Important Meal of the Day”, it is breakfast that wins this title. On a school day, breakfast can often be the meal that is the most lacking for our children–lacking in nutrition, lacking in time to consume it, or lacking in, well, maybe we forgot to feed them. You know you should send them off to school with bellies full of mind and body-nourishing food, but all too often we may find ourselves throwing granola bars at them as they jump into the car. No judgment here, but if you aspire to feel a little bit less of the morning rush on school days, why not try one of these make-ahead breakfast ideas. (Oh and just a reminder–school now starts at 8:20 am.)

Overnight oats are a perfect way to get hearty oats into your family, in portable packaging if necessary, and perfect for some of the warmer days that are ahead. Save the hot oatmeal for the winter. Overnight oats are totally customizable. Search the internet and you will find tons of ideas. Here’s a good place to start your overnight oats adventure.

Make-Ahead Egg Muffins

Have kids that would also like to see dessert named “Most Important Meal of the Day”? Why not try breakfast cookies? Make a batch of these and have them ready to grab and go on the way out the door.

One last recipe, (a favorite in our household) Chocolate Peanut Butter Milkshakes. This one is not a make-ahead recipe but can be put together pretty quickly in the morning. Ever wonder what to do with overripe bananas? Put them in your freezer so you have them on hand for these delicious milkshakes. These are suitable for breakfast or dessert.

Lunch:

We know that making lunches can be a challenge too, even if our kids are only at school 2-3 days a week. Amidst the morning bustle, we may forget there are lunch options other than a sandwich. Hopefully, these ideas will spark some creativity and inspiration.

Our character trait for August and September is Responsibility, so encourage your kids to get involved in preparing meals and help nurture this trait in them.
