Welcome to Down Home, San Luis Obispo Classical Academy’s blog! We are a classical school offering several options to make our education work for families with infants through high schoolers. Our signature hybrid program, which is part-time classroom and part-time home instruction, provides an engaging education for preschool through middle school (with full time options available). We also have a university model high school. This blog is meant to support and encourage on the home front because, in so many ways, the heart of what happens at SLO Classical Academy happens down home.

What’s For Dinner?

Hello! It’s Wednesday! How is meal preparation and planning, etc. going in your home during these shelter in place days? Have you been able to find what you need to make meals for your family or are you feeling like you should watch more episodes of Chopped for ideas on how to use what’s in the pantry? Is, “How can you be hungry again?” a phrase you are frequently saying? Well, hopefully, you have all that you need, and if you do not, please reach out to your SLOCA community! We are all in this together. 

Today we have compiled for you a handful of recipes that only require a handful of ingredients. Many of these are even easy enough for our perpetually hungry kids to make. So put them to work! You’ll find the title of the recipe, a list of the ingredients required, and a link to the full recipe. Bon Appetit!


Dinners:

BBQ Chicken Stuffed Sweet Potatoes: Chicken, BBQ Sauce, & Sweet Potatoes.

Taco Lime Grilled Chicken: Chicken, Limes, & Taco Seasoning.

Easy Chili: Ground Meat, Chili Beans, & Diced Tomatoes with Green Chiles.

Cajun Dijon Grilled Pork Tenderloin: Pork Tenderloin, an Orange, Cajon/Creole Seasoning, & Dijon Mustard.

Oven-Braised Beef with Tomatoes and Garlic: Beef Chuck Roast, Can of Whole Tomatoes, & Garlic.

Gnocchi with Sausage and Spinach: Gnocchi, Cooked Sausage, & Spinach.

Fast Fish Tacos: Tilapia, Sour Cream, Salsa, Tortillas, & Cabbage.

Honey Garlic Salmon: Salmon, Butter, Garlic, Honey, Soy Sauce, Lemon, & Seasonings.

Slow Cooker Pulled Pork: Boston Butt Pork Roast, Root Beer, & Vinegar Based BBQ sauce.

Baked Ham and Cheese Roll-Ups: Pizza Dough, Deli Ham, & Mozzarella Cheese.

Slow Cooker Lemon Garlic Chicken: Chicken, Lemon, Garlic, & Herbs.

Vegan Black Bean Burgers: Black Beans, Ground Flaxseed, Zucchini or Carrots, Chili Powder, & Salt.

Mexican Quinoa: Quinoa, Black Beans, Frozen Corn, Cumin, &  Salsa.

Coconut Curry: Coconut Milk, Red Curry Paste, Broccoli, Chickpeas, & Cornstarch.

Chickpea and Rosemary Baked Frittata: Eggs, Parmesan Cheese, Chickpeas, & Rosemary.

Vegetable Fried Brown Rice: Brown Rice, Eggs, Frozen Mixed Veggies, Soy Sauce, Cooking Oil.

Quinoa with Onion and Peas: Quinoa, Onion, Peas, Walnuts, Olive Oil.

Desserts:

Flourless Peanut Butter Mug Cake: Peanut Butter, Sugar, & Eggs.

Coconut Oil Chocolate Bars: Cocoa Powder, Coconut Oil, Honey or Maple Syrup, & Vanilla.

Mom’s Fried Apples: Apples, Butter, Sugar, & Cinnamon.

Lemon Bars: Lemons, Flour, Eggs, Powdered Sugar, & Butter.

3 Ingredient Brownies: Banana, Cocoa Powder, Peanut or Almond Butter.

Homemade Lara Bars: Dates, Nuts, & Other Ingredients Depending on Flavor.

Chocolate Chip Cookie Dough Bites: Oat Flour, Maple Syrup, Coconut Oil, Vanilla, & Chocolate Chips.

Berry Cobbler: Frozen Berries, Cake Mix, Oats, Walnuts, & Butter.
